SUSHI CHEF / SUSHIMAN WANTED

We are looking for an experienced and highly skilled Sushi Chef / Sushiman to join our team in Kabuki Sushi Caldas da Rainha.

Requirements

• Minimum 5 years of professional experience as a Sushi Chef / Sushiman

• Strong knowledge of Japanese cuisine and sushi preparation

• Must be fully confident in cleaning, filleting and breaking down whole fish

• Excellent fish-cutting and knife skills

• Ability to work with different species of fish and maximize their yield

• Strong focus on waste control and food cost

• High-level preparation and presentation of:

  • Nigiri

  • Gunkan

  • Uramaki

  • Hosomaki

• Excellent knowledge of fish handling, storage and food safety

• Ability to maintain consistent quality, portioning and presentation

• Clean, organized and professional working methods

• Ability to work efficiently in a busy restaurant environment

• Responsible and committed attitude
